Meat Balls In a Spicy
Tomato and Pepper Sauce
Beef Mince, Eggs
Onions Finely Diced, add
any herbs of your choice
Add Bread Crumbs
add salt and pepper, Mix together
By hand or mixer
Makes about 18 Meat balls
Depending on size
Melt Butter, add onions, carrot both roughly chopped, add diced bacon , and Sweat off. Add flour
and a spoon tomato puree & form roux, cook out on low heat for about minuet ,then start to add beef stock slowly
at first approx 1¾ pint will be needed to make the tomato sauce, then simmer on very low heat
When the sauce as been simmering for about five minuets strain, then add tomatoes and diced Peppers,
orange and green , add 2 drops Tabasco sauce, lee & perrins sauce and adjust seasoning if required
and continue simmering on very low heat un till required.
Pour a little oil in to a frying pan and add a clove of garlic, fry of the meat balls for approx 5 -10 minuets on
A low heat, then transfer the meat balls to a dish and cover with the sauce, place in oven gas mark 6 and cook for
Approx 30 - 40 minuets or until cooked, turn meat balls over in the sauce after 15 mins
Cook of your pasta in salted water. When the meat balls are cooked arrange pasta on a plate, place the meat
Balls in the centre, pour over the sauce and finish of with grated cheese
